Winter mug cakes

#1 Snickerdoodle Mug Cake

  • 4 tb almond flour OR other nut flour

  • 1 tablespoons coconut flour OR 1 tsp. psyllium husk powder

  • 1/4 ts. guar gum OR 1/8 ts xanthan gum

  • 1 large egg (~55g) or two small eggs

  • 4 tablespoons powdered sugar-alcohol (xylitol, erythritol, isomalt, sorbitol)

  • 1/4 teaspoon baking powder

  • 2 tb half-n-half or a mix of cream and water OR your favorite low-carb nut milk

  • 1 tablespoons salted butter, melted

  • 1/4 teaspoon vanilla extract

 

For layering/topping:

  • 1 tablespoon xylitol or erythritol

  • 1/4 teaspoon cinnamon

 

Combine all ingredients except the layering ingredients in bowl and mix very well. 

Pour 1/2 of the batter into a large mug, then sprinkle over 1/2 of the layering mixture.

Pour the remaining batter on top (do not mix) and then sprinkle over the remaining cinnamon mixture.

Microwave on medium-high for 1 minutes, checking at 40 seconds to prevent over-cooking.

#2 Peppermint Swirl Mug Cake

  • 4 tbsp almond flour OR other nut flour

  • 1 tbsp coconut flour OR 1 tsp. psyllium husk powder

  • 1/4 tsp guar gum OR 1/8 tsp xanthan gum

  • 1/4 tsp baking powder

  • 1 tbsp salted butter, melted

  • 2 tbsp half-n-half OR your favorite low-carb nut milk

  • 1 large egg (55g) or two small eggs

  • 4 tb powdered sugar-alcohol (xylitol, erythritol, isomalt, sorbitol)

  • 1/4 tsp peppermint extract

  • 1/4 tsp vanilla extract

  • 1 drop of red food coloring

 

Combine all ingredients except the food coloring in a large mug and mix very well. 

Drop in 1 drop of red food coloring, then carefully swirl with a chopstick or the handle of a spoon. 2-3 stirs is enough, over-mixing will turn the entire cake pink.

Microwave on medium-high for 1 minutes, checking at 40 seconds to prevent over-cooking.

#3 White Chocolate Cranberry Mug Cake

  • 4 tbsp almond flour OR other nut flour

  • 1 tbsp coconut flour OR 1 tsp. psyllium husk powder

  • 1/4 tsp guar gum OR 1/8 tsp xanthan gum

  • 1/4 tsp baking powder

  • 1 tbsp salted butter, melted

  • 2 tbsp half-n-half OR low-carb nut milk

  • 1 large egg (55g) or two small eggs

  • 4 tb powdered sugar-alcohol (xylitol, erythritol, isomalt, sorbitol)

  • 1/4 tsp almond flavoring

  • 5-10 chopped cranberries

  • 2 tbsp sugar-free white chocolate (about 2 squares, or 1 1/2 tablespoons white chocolate chips) chopped into small chunks

  • (optional) 1 tablespoon flaked almonds

 

Combine all ingredients except the chocolate, almonds and cranberries in a large mug and mix very well. 

Drop in 1 tablespoon of sugar-free white chocolate chunks and the cranberry chunks and mix.

Microwave on medium-high for 1 minutes, checking at 40 seconds to prevent over-cooking.

In a small bowl melt the last tablespoon of chocolate and drizzle over top the mug cake, then sprinkle over the flaked almonds.

 

 

 

 

 

 

 

 

 

 

 

#4 Coconut White Chocolate Mug Cake

 

  • 3 tbsp almond flour OR other nut flour

  • 2 tbsp coconut flour OR 2 tsp. psyllium husk powder

  • 1/4 tsp guar gum OR 1/8 tsp xanthan gum

  • 1/4 tsp baking powder

  • 1 tbsp melted coconut oil or melted butter

  • 2 tbsp coconut milk

  • 1 large egg (55g) or two small eggs

  • 4 tb powdered sugar-alcohol (xylitol, erythritol, isomalt, sorbitol)

  • 1/4 tsp vanilla flavoring

  • (optional) 1/8 tsp coconut flavoring

  • 2 tablespoons sugar-free white chocolate (about 2 squares, or 1 1/2 tablespoons white chocolate chips) broken into small chunks

  • (optional) unsweetened dried coconut flakes

 

 

Combine all ingredients except the chocolate, 1 tbsp. coconut oil, and coconut flakes in a large mug and mix very well. 

Drop in 1 tablespoon of sugar-free white chocolate chunks and mix.

Microwave on medium-high for 1 minutes, checking at 40 seconds to prevent over-cooking.
