Yield: 5 cups (10 servings)
Serving Size: 1/2 cup (42g)

1/2 cup (90g) powdered erythritol / Swerve confectioner's sweetener / xylitol

1/4 tsp salt (omit if using salted peanut butter or salted cracklings!)

2 Tbsp (28g) unsalted butter / ghee OR coconut oil

4 cups (120g) fried pork rind cracklings // OR other fried animal skin (click here for DIY recipe)

1/4 cup (23g) protein powder (neutral , chocolate or vanilla-flavored)

1/4 cup (70g) peanut butter (creamy / smooth, no-sugar-added)

1/2 cup (75g) chopped keto chocolate (make your own DIY keto chocolate here!)

1/2 tsp vanilla extract
1. Melt together the butter, chocolate, and peanut butter until smooth (I used 30-seconds bursts in the microwave, mixing in between each).
2. Next mix in vanilla and salt, then pour this chocolate mixture over the pork cracklings (make sure to chop up the cracklings if they are too large). Stir the cracklings to coat evenly in the chocolate mixture, then let sit at room temperature for 30 minutes, or in the fridge for 10 minutes, just until the chocolate has started to thicken a bit.
3. Once the chocolate mixture has thickened up, use a sieve to sift over half of the erythritol, then mix well to coat all the pieces. Repeat this process with all the protein powder, then finish with the remaining powdered erythritol.
