Low-Carb Strawberry No-Bake Cheesecake

Servings: 1 medium slice

Yield: 1 large cheesecake / 8 slices

80g of low-carb no-bake crust

2 batches of low-carb no-bake vanilla cheesecake filling

80g (4 large) chopped strawberries (frozen or fresh)

2 tbs. erythritol or xylitol

1.5 ts. powdered gelatin

1 tbs. cold water

(optional) 4 medium fresh strawberries, chopped (the nutrition info below does not include these extra berries)

To make the strawberry swirl:

First, soak the gelatin in the cold water in a small bowl, set aside.

Next, puree the 80g of chopped berries with the sweetener until smooth, then cook over medium heat until it starts bubbling.

Turn off the heat and add the soaked gelatin, mix well, set aside (keep at room temperature).

To make the cheesecake:

First, press the crust mixture flat in the cheesecake pan or mold of choice.

Next, sprinkle the 4 chopped fresh strawberries on top of the crust (optional).

Pour the room-temperature no-bake cheesecake filling over top and tap the pan to pop any large air bubbles.

Spoon the warm strawberry puree on top of the cheesecake batter in in dollops, leaving blank spaces in between of plain cheesecake. (see video above).

Using a thin chopstick or similar utensil held vertically, swirl the strawberry puree with the cheesecake batter (make sure not to scrape the crust underneath, nor move the strawberry chunks).

Place the completed cheesecake into the fridge to chill for a minimum of 2 hours (longer if doubling this recipe).

For a baked strawberry cheesecake:

If you prefer the taste of baked cheesecake, substitute the above "no-bake cheesecake filling" for a double batch of low-carb new york cheesecake batter or low-carb french cheesecake batter, and make sure to use one of the low-carb crust options that does not contain chocolate.

For the strawberry swirl, leave out the gelatin and the cold water, instead cook the puree 5 minutes longer or until it has started to thicken slightly (but do not turn it into jam). Bake the final cheesecake according to the recipe directions for the filling you chose.
