lemon poppyseed muffins

***The video above shows quantities for a full recipe, but in reality I only made a HALF-recipe, so it only shows 10 mini muffins (5 servings).

 

Serving Size: 1 medium muffin // 2 mini muffins

Yield: 10 servings 

 

 

 

 

  • 1/2 cup (100g) powdered erythritol OR xylitol 

  • 4 *large eggs (55g each, about 220g total)

  • 3/4 cup (80g) almond flour // OR other nut flour

  • 1 tbsp (9g) psyllium husk powder // OR 2 tbsp. (14g) coconut flour // OR 2 tbsp. oat fiber

  • 6 Tbsp (90g) melted butter

  • 1/2 tsp (2g) baking powder 

  • 2 tbsp (2g) lemon zest (the zest of about 2 medium lemons, only 1 tbsp if packed down)

  • 2 tbsp (30ml) lemon juice (the juice of about 1 medium lemon)

  • 1 tbsp (8g) poppy seeds

  • (optional) 1 tsp. (5ml) vanilla extract // OR 1/2 tsp. lemon extract

  • (optional) 1/2 tsp (4g) salt (omit if using salted butter) 

  • (optional) 1/4 tsp guar gum // OR 1/8 tsp. xanthan gum

*PLEASE do not use a different size/amount of egg. Low-carb baking relies heavily on eggs for structure, and therefore using different amounts can have a noticeable effect on the outcome of your dessert, especially when it comes to texture and moisture content.

 

 

 

1. Preheat the oven to 355F (180C). Wisk or sieve together the dry ingredients (except the erythritol, salt, and poppy seeds) in a medium bowl and set aside.

 

2. In a large bowl, mix together all remaining ingredients (except the poppy seeds) until very thoroughly combined, then slowly mix in the dry ingredients. Once all the dry ingredients have been incorporated, add in the poppy seeds and mix well.

 

3. Split the batter evenly between greased muffin/cupcake tins or cupcake/muffin liners and bake for:

 

      15-20 minutes = normal-sized muffins

      10-15 minutes = mini muffins
