spiced candied pecans

Serving Size: 1/4 cup

1.5 cups (160g) roasted pecans / how to roast nuts at home

1/2 cup (105g) erythritol / or other keto-friendly granulated sweetener

2 Tbsp (30ml) water

1/4 tsp maple flavoring or vanilla extract

1/4 tsp fine sea salt / or 1/2 tsp. coarse sea salt
Directions:

Over medium heat, mix together the water, sweeteners, spices, salt, and maple flavoring until combined. Once fully mixed, bring to a simmer and stir occasionally until the sweetener has dissolved, and then stir in the pecans.

Keep stirring and mixing the pecans to fully coat in the syrup mixture, continue to cook and stir until the water has completely evaporated off and the syrup is thick enough to coat the nuts completely without much left in the bottom of the pan.

Remove from the pan and let them cool for a few minutes. Stir several times to coat the nuts evenly with any leftover syrup, then spread onto a non-stick baking mat or parchment paper so that the nuts are flattened into a single layer. Let cool completely before transferring to an air-tight container. For a sparkly "frosted" look, wait until the pecans have fully cooled, then toss through or sprinkle with a small amount of granulated keto sweetener and shake off the excess

STORAGE ADVICE:
That author from the original recipe (link above) says these candied nuts "should be kept in a sealed jar or container. They can be kept for up to two months. They are also freezer friendly, for up to 6 months. Avoid storing for longer, as they will start to moisten and sticky once removed." I have found that they get sticky in humid environments very quickly, so be sure to use an air-tight container and I would really recommend AGAINST storing them in the fridge because temperature shifts will cause condensation. The freezer will work if you really need them to last a long time, but the #1 option for me is an air-tight container in a dark, dry pantry at room temperature.
